Natural cocoa powder is just from roasted cocoa beans. It’s acidic and bitter, with a very strong and concentrated chocolate flavor and usually light brown colour.
Alkalized cocoa powder is made from cacao beans that have been neutralize their acidity from a pH of 5 to a pH of about 7. This is also know to us that Dutch process cocoa powder is only slightly acidic also in dark brown colour .
